Sandy Lane Hotel, an AAA Five Diamond, Forbes Five Star exclusive resort and a member of Leading Hotels of the World, is seeking to recruit a Senior Wine Sommelier in the Food and Beverage Department.

 

The Role

The Wine Sommelier will report to the Assistant Director and Director of Food & Beverage and is responsible for delivering quality and variety of wines and wine services, consistently and effectively reflecting the fine dining environment of Sandy Lane Hotel.


Key duties and responsibilities:

• Understands the sequence of service in Restaurant(s)

• Deliver wine training sessions at basic level along with tasting and explaining a wines personality

• Have a thorough understanding of the Restaurants' food, wine and bar menus

• Have an advanced knowledge of food and wine pairing

• Effectively run a station through observance and teamwork, ensuring floor presence and communication with colleagues

• Assists in any area of restaurant operations as instructed by the Restaurant Manager

• Assists with the updating of the Wine Lists and IPad system.

• Prepares Wine Sales Mix for Profit & Loss Meeting and generate Micros Sales Reports

• Conducts Monthly Equipment Inventory and monthly wines stock take

• Conducts Daily Checks to maintain the organization of the Wine Cellar (Stock Levels, Cleanliness, Wine Transfers and Wastages)

• Oversees the Wine Service and gives guidance to the Wine Sommeliers during the shifts.


Our Ideal candidate must posses:s


• At least 5 years’ experience managing the wine service in a fine dining environment, 3 of which should include managing a restaurant

• Knowledge of Wine List and Cellar Management as well as a thorough knowledge of wines, wine making, spirits, liqueurs, cognacs etc.

• A thorough knowledge of food, food service and the combination of food and wine. The ability to effectively communicate with guests and staff on all levels

• The ability to communicate affable with guests, dignitaries and staff and project a positive image

• Internationally recognized advanced Sommelier courses

• Good leadership, organizational, motivational and delegation skills

• Computer literacy in Microsoft, Abacus and Micros

• Excellent communication, computer writing and interpersonal skills

• Ability to work under stress calmly and be professional in a busy environment

• Ability to stand and walk for a full shift

• Excellent grooming standards and have an enthusiastic attitude
